Bright colors and festive foods brings a party vibe to every table - and tableside food prep takes the experience to the next level.

The entryway is saturated with color, greeting me with a bright and vibrant atmosphere. Murals cover the walls and ceiling in a tasteful nod to Mexican culture and tradition. The booths and tables offer comfortable spots for a meal, with a welcoming bar for a fabulous drink. We were immediately seated and our server, Alex, met us with a big smile. They brought a creamy and rich bean dip to the table soon after we were seated. It perfectly complemented the traditionally prepared salsa, served warm in the ways of Old Mexico. Not what this area is used to, and very delicious. The meal really kicked off with the tableside guacamole. This treat is prepared to order right in front of you for a little entertainment. Inclusion options are tomatoes, jalapenos, pico de gallo, cilantro, salt, and lime, and we could choose if we wanted it chunky or smooth. We decided to go all the way, resulting in a fresh, bright, acidic bite with just enough kick to make it fun. We even got a taste test – a small bite served see if we wanted more of anything! The guacamole experience is highly recommended, as this was the highlight of our meal. I ordered Chilaquiles Rojos Verdes off the lunch menu (shown at the top of the page). Chilaquiles is a Mexican breakfast dish with eggs, sauce, and meat served over chips. The scrambled eggs, saucy chips, and tender carne asada chunks left my mouth watering for more. This was accompanied by Spanish rice (although you do have the option of cilantro rice) and refried beans, which you can tell were made from scratch. FLAVOR is the name of game for beans, as these beans were smooth and seasoned to perfection. My lunch companion ordered the highly recommended Cuban sandwich. This entrée was served with fries, and you can choose regular, sweet potato, curly, or waffle. We went with the sweet potato. The Cuban was served on a traditional torta roll and was filled with pulled pork, ham, cheddar cheese, mustard, and pickles. The balance of acid from the pickles and mustard with the richness of the ham and pulled pork were complemented by the sharp cheddar cheese. All these flavors came together for a great bite! Other standouts on the menu include fajitas, an entire Birria section (including RAMEN), rice bowls (think Chipotle but WAY better), and their Mesquite Grill, which options a little bit of everything, including shrimp, carne asada, smoked sausage, chicken, onions, and bell peppers served with the usual taco fixings. You also have the option to add or substitute charro (bean) soup. It’s a must-try for my next visit. While the Mesquite Grill has a hefty price tag at $44.99, we were told it is more than enough for two people to share. We wrapped up the meal with churros. This classic Mexican dessert was made to perfection, with a dense bite bursting with that cinnamon and sugar flavor. Drizzled with chocolate and served with a side of whipped cream made this the perfect way to end our lunch. Pedros is a fantastic new addition to our town’s dining scene. The large seating area makes it a great place for celebrations, but there’s plenty of smaller tables and booths for a girls’ night out or just a great lunch.
